History

Rolex is a Ugandan street food whose name is a playful contraction of “rolled eggs”: an omelette filled with chopped vegetables (cabbage, tomato, onion) is cooked, then rolled inside a chapati fresh off the pan, forming a compact roll to eat on the go.

Born in the streets of Kampala, where it’s sold at all hours by countless small stands, the rolex has become so popular that it’s now the subject of an annual festival dedicated to it in the Ugandan capital; simple, fast and cheap, it embodies the rise of contemporary Ugandan street food on its own and is now exported to East African restaurants abroad.

  • 4 chapatis (or homemade chapati dough)
  • 8 eggs
  • 1 tomato, 1 onion
  • Finely shredded cabbage
  • Salt, pepper, oil

Ugandan rolex, step by step

  1. Prepare the chapatis ahead of time and keep them warm under a cloth.
  2. Beat the eggs with the chopped tomato, onion and shredded cabbage, then season with salt and pepper.
  3. Cook the omelette in a hot, oiled pan, spreading it thin.
  4. Lay the warm chapati directly on top of the omelette while it’s still in the pan, just before it fully sets.
  5. Press lightly so the chapati sticks to the omelette, then flip the whole thing over.
  6. Roll the chapati and its omelette tightly into a compact roll, then cut into pieces and serve at once.

Cooking method

Technique: the chapati is laid directly on the omelette while it’s still cooking in the pan, so the two layers bond before rolling.
Traditional equipment: a flat street-food griddle or pan, a typical Kampala mobile stand.
Signs it’s ready: the omelette should still be slightly underset at the center when the chapati goes on, to properly weld the two layers together.

A rolex costs a small fraction of that daily figure at a Kampala street stand — eggs, a little cabbage and tomato, and a chapati fried to order are what made it a genuine mass-market food rather than a novelty: cheap enough to eat several times a week, fast enough to make while a customer waits. That combination of low cost and short cooking time is central to why it spread from a handful of stalls to a citywide, then national, phenomenon with its own annual festival.
