World Cuisine Atlas (The Atlas of Cuisines) is an online culinary atlas: 250 of the world’s most popular dishes, documented one by one, region by region.

What you’ll find here

Every entry follows the same standard: the dish’s country of origin, its verified history, the list of ingredients for four people, a step-by-step recipe guide, the traditional cooking method (and its modern alternative), and two or three sourced anecdotes you won’t read anywhere else. A news section also keeps track of what’s moving in world gastronomy: trends, events, practical guides.

Our method

The histories rely on verifiable facts and cite their sources; when a dish’s origins are disputed — and they often are! — we say so, in the conditional. The recipes favour authentic technique while remaining achievable in an ordinary kitchen. The photos used are royalty-free and credited on each page.

Three languages

The site is rolling out in French, English and Spanish. The versions are not word-for-word translations but adaptations, each with its own references.
