History

Griot is an iconic dish of Haitian cuisine, made of pork cubes marinated for several hours in a mix of citrus (bitter orange, lime), garlic, onion and spices, then boiled to tenderize before being fried until deeply golden and crisp.

It is almost always served with pikliz, a relish of finely sliced cabbage, carrot and chili macerated in vinegar, whose sharp bite balances the richness and crunch of the fried meat; the griot-pikliz duo has become a culinary symbol of the Haitian diaspora, served at nearly every family celebration.

Ingredients — serves 4

  • 800 g pork shoulder, cubed
  • 2 bitter oranges, or 1 orange and 2 limes
  • 4 cloves garlic
  • 1 onion
  • 1 scotch bonnet pepper
  • Oil for frying
  • Cabbage, carrot, vinegar for the pikliz

Haitian griot, step by step

  1. Marinate the pork cubes for several hours with citrus juice, crushed garlic, onion and spices.
  2. Boil the marinated meat with a little of its marinade until tender and the liquid has nearly all reduced.
  3. Heat the oil and fry the pork cubes until deeply golden and crisp.
  4. Finely slice the cabbage, carrot and chili for the pikliz.
  5. Cover the sliced vegetables with vinegar and let macerate for at least a few hours.
  6. Serve the griot hot with pikliz, rice and beans, and fried plantains.

Cooking method

Technique: a two-stage cook — boiled to tenderize, then fried to crisp — never fried directly from raw.
Traditional equipment: a large skillet or deep fryer, a jar for macerating the pikliz.
Signs it’s ready: the cooking liquid should have almost fully reduced before frying, so the meat caramelizes without excess moisture.
