Vanilla lobster pairs two emblematic resources of the Comoros archipelago: small-scale lobster fishing in the shallow waters of the Indian Ocean and vanilla growing, with the Comoros historically ranking among the world’s leading producers alongside neighboring Madagascar. This sweet-and-briny pairing reflects a relatively recent culinary creativity, born from Indian Ocean gastronomic tourism.

Served in Moroni’s upscale restaurants as well as in some households on special occasions, vanilla lobster has become a showcase dish highlighting Comorian agricultural exports through a single plate.

Ingredients — serves 4

  • 2 fresh lobsters (or lobster tails)
  • 1 vanilla pod
  • 200 ml thick heavy cream
  • 1 shallot
  • 50 ml white wine or lemon juice
  • Butter
  • Salt, pepper

Vanilla Lobster, step by step

  1. Split the lobsters lengthwise and gently remove the meat from the shells.
  2. Sauté the minced shallot in a little butter until translucent.
  3. Deglaze with the white wine or lemon juice and let it reduce by half.
  4. Split the vanilla pod, scrape out the seeds, and add them along with the pod to the sauce.
  5. Pour in the cream and let it thicken slightly on low heat for a few minutes.
  6. Sear the lobster meat quickly in butter, then coat it with the vanilla sauce and serve right away.
