At around 80 kcal per piece, a single brigadeiro is a small, controlled portion — the entire recipe is built from just condensed milk, cocoa, and butter, cooked down until thick, then rolled small enough to eat in one or two bites. Nearly all of the 12 g of carbohydrate is sugar, since condensed milk itself is already sweetened before the cocoa and sprinkles are added.

History

Brigadeiro is said to have been born in the 1940s in Rio de Janeiro, named in honor of Brigadier Eduardo Gomes, a military officer and candidate for the Brazilian presidency. His supporters reportedly sold this fudgy chocolate candy at fundraising events for his political campaign. And although he lost the election, the sweet named after him outlived it and became immensely and lastingly popular throughout Brazil.

Made only from sweetened condensed milk, cocoa powder, and butter cooked until thickened, then rolled into balls and coated in chocolate sprinkles, brigadeiro has become a fixture of Brazilian birthday parties and celebrations of all kinds.

Brazilian brigadeiro recipe, step by step

  1. Pour the condensed milk, cocoa, and butter into a thick-bottomed saucepan.
  2. Heat over medium-low, stirring constantly with a spatula.
  3. Continue cooking until the mixture thickens and pulls away from the bottom of the pan.
  4. Pour the mixture onto a buttered plate and let cool completely.
  5. Lightly butter your hands and shape the cooled mixture into small, even balls.
  6. Roll each ball in chocolate sprinkles until fully coated.

Cooking method

Technique: a slow reduction of condensed milk, stirred constantly, until it reaches a thick paste that pulls away from the pan.

Traditional equipment: a thick-bottomed saucepan, a heat-resistant wooden or silicone spatula.

Tips: the brigadeiro is ready when you can tilt the pan and the mixture comes away in one mass, without running.
