History

Calulu, a stew of dried fish paired with cassava or sweet potato leaves and okra, is considered one of Angola’s national dishes, said to draw its roots from Bantu culinary traditions predating Portuguese colonization. Its recipe varies widely depending on the region and locally available resources.

Simmered at length to soften the greens and thicken the sauce with okra, calulu is made with either dried fish or meat depending on the household, and remains a central dish for major Angolan family gatherings today.

Ingredients — serves 6

  • 300 g dried fish (or smoked fish)
  • 300 g cassava leaves or spinach
  • 200 g okra
  • 2 African eggplants (or regular eggplants)
  • 2 onions
  • 3 tomatoes
  • Palm oil
  • Salt, chili pepper

Calulu, step by step

  1. Soak the dried fish in warm water for about 30 minutes to rehydrate and lightly desalt it.
  2. Sauté the minced onions and crushed tomatoes in palm oil until you get a sauce base.
  3. Add the drained fish and the eggplants cut into pieces, then simmer for 20 minutes.
  4. Stir in the finely shredded cassava leaves and continue cooking covered for 30 minutes.
  5. Add the okra cut into rounds near the end of cooking to lightly thicken the sauce.
  6. Season with salt and chili pepper to taste before serving with rice or cassava flour (funge).
