The exact origin of tres leches cake is disputed among several Latin American countries (Mexico and Nicaragua in particular both claim strong ties to this dessert), though its popularity is often linked to condensed and evaporated milk brands, which printed the recipe on their packaging and in promotional cookbooks across Latin America starting in the mid-20th century, a marketing-driven spread that helped standardize the recipe across an entire region rather than it emerging from one confirmed birthplace.

The idea of soaking a sponge cake in milk has some precedent in European pastry traditions, but the specific combination of “three milks” (evaporated milk, sweetened condensed milk, and heavy cream) that defines the dish is considered a distinctly Latin American innovation.

Mexican tres leches cake recipe, step by step

  1. Beat the egg yolks with half the sugar until pale.
  2. Whisk the egg whites to stiff peaks with the remaining sugar, then gently fold into the yolks along with the sifted flour and baking powder.
  3. Pour into a buttered pan and bake at 180°C (350°F) for about 25-30 minutes, then let cool completely.
  4. Poke the cooled cake all over with a fork.
  5. Mix the condensed milk, evaporated milk, and cream, then pour slowly and gradually over the poked cake so it fully absorbs the mixture.
  6. Refrigerate for at least 2 hours, top with whipped cream, and dust with cinnamon before serving.
