History

Sopa paraguaya is one of the most oddly named dishes in Latin America: despite its name meaning “Paraguayan soup,” it is in fact a dense cake made of corn flour, cheese and onion, baked until firm and slightly moist — far removed from anything resembling a soup.

The most widespread local legend explains this paradox with a kitchen accident at the court of Paraguayan president Carlos Antonio López in the 19th century: a cook, having over-thickened a corn soup by mistake, is said to have served it as is out of necessity, giving birth to a dish that kept the name “soup” despite its now-solid texture.

  • 300 g pre-cooked corn flour
  • 300 ml milk
  • 3 eggs
  • 200 g grated fresh cheese
  • 1 large onion, chopped
  • 100 g butter
  • Salt

Sopa paraguaya, step by step

  1. Sauté the chopped onion in a little butter until translucent and lightly golden.
  2. Mix the corn flour with the milk to form a smooth, lump-free batter.
  3. Fold in the beaten eggs, grated cheese, sautéed onion and the rest of the melted butter.
  4. Salt and mix well until the batter is even and pourable.
  5. Pour the batter into a buttered pan and bake in a hot oven.
  6. Bake for about 40 minutes until the top is golden and a knife inserted comes out nearly clean.
